Do you need to cut back on gluten but can’t imagine life with out pasta? No worries! Spaghetti squash to the rescue!
I was pretty skeptical about using squash instead of pasta the first time I heard of it. I mean, can you really beat the amazing creation that is pasta? Well, maybe spaghetti squash can’t completely replace pasta in every way, but I have to say it’s an awfully good substitute. Especially if you aren’t able to handle gluten, you need to get familiar with how great spaghetti squash is.
This recipe is great. It’s so aromatic with the fresh herbs. Beans are a great source of protein, so this is a perfect meatless meal that will still fill you up. It’s healthy and really delicious.
You can serve all the same things with this meal that you would with a spaghetti dinner. I like a good green salad and bread, if you can have it. If you want something simple, try this wedge salad. I love it when I’m in a hurry.
