This week, I did a little bit of recipe creation and a little bit of cooking old favorites. We had a great day last Sunday. The rain finally stopped and the sun came out. Our soon-to-be son-in-law joined us for lunch. We hadn’t seen him since Meredith went to China a month ago.
I made an old favorite, Orange Chicken. This is such a quick meal and it’s perfect for after church. After lunch, we took the kayak up to the pond.
It’s not a big pond, but it is big enough to enjoy paddling around for a bit.
On Monday, I made Honey Mustard Chicken in the Slow Cooker, which we shredded for sandwiches. I also made a butternut squash in the slow cooker. I’ll be sharing that recipe soon.
I also finished the book, What Alice Forgot by Lianne Moriarty. It’s about a woman who wakes up in a gym, thinking she’s 29 years old and madly in love with her husband. But the reality is she is 39 and in the middle of a nasty divorce and custody battle. She doesn’t remember any of the last 10 years. The book is her journey to figure out how she got to where she is now. It was a thought provoking, fast moving read. Great book from first page to the last.
On Tuesday, I went to the farmer’s market. There aren’t as many vendors there on Tuesdays as there are on Saturdays. I bought some summer squash, zucchini, black raspberries and a few onions. I used part of it to make Vegetable Chili from my Feast in 15 ebook. I did add some hamburger to it that I had cooked and in the freezer. The boys complain if there isn’t meat in the meal. They’re in the “age of meat”.
Wednesday, I experimented with another slow cooker recipe. This time for Red-Eye BBQ Ribs. The recipe was a winner! We had steamed cauliflower and a wedge salad with the ribs.
Thursday started with an email from Meredith. She was sick with what she thought was food poisoning and thought she might have to go to the hospital. I heard from her again around 11:30am our time. She had been to the hospital and they’d given her an IV of fluids. She passed out on the way to the squatty potty. I cannot imagine using a squatty potty while being so sick. Her fever was 39C (102.2F). The Chinese doctors treat fever by adding blankets to make the fever break. It’s hot and humid in Xiamen now and there’s no air conditioning in the hospital.
Meredith’s roommate also got very sick and probably should have gone to the hospital, but it was the middle of the night when she needed to go and there was no one to take her. Both girls are doing better now. Their moms, however, are ready to have them home again!
I had a hard time concentrating on anything on Thursday. Dinner snuck up on me, but I threw some chicken tenders on the grill. I cooked the rest of the squash, zucchini and onions in a skillet with garlic and herb seasoning. And we had corn on the cob with it.
It’s Friday as I’m writing this. I need to go out to the grocery for some things to take to my in-laws tomorrow. We’re going up to help them move. My kids are asking for hamburgers tonight for dinner and since the weather is gorgeous today, I think grilling out is a great idea.
