I have made this at least 10 time and each time it is good. I have found using half pepper-jack cheese gives it a nice taste and no real spice to it. Also sometimes I will add some half and half if I don’t have enough eggs. I always turns out and I never have leftovers. I have done it also with turkey sausage too not the ham because some don’t like pork. Either I fry it up before or just use the precooked sausage links cut up.

I’m new to crock pot cooking and haven’t used it much, but this did happen before. Nevertheless, this was a delicious casserole. I scooped out what cooked around the side and stirred up what was fom the center and left it to finish cooking.

I haven’t had that happen before. I’m not sure what would cause it, unless there was a lot of ice or moisture on the potatoes.

My kids didn’t like it. I wonder if a shorter time would work better. I would like the trick. lol

They seem so easy but wasn’t sure of what the texture of the eggs would be like. Your looks really good!
