Such a good ingredient choice, Tiffany. Today I bring a recipe for how I make Stovetop Rotisserie Chicken so that I can have cooked chicken in my freezer. Also there are two recipes for using cooked chicken or turkey. Chicken in Shells Alfredo. This is a favorite at our house. Chicken and Gnocchi Soup. This is a new soup recipe for me, and we thought it was delicious. It could also be made using tortellini, which I think would be very good. I see several recipes already linked up that I want to try. Thanks for hosting, and an early "Happy Thanksgiving."

Another yummy way to use turkey - turkey croquettes! Finely chop leftover turkey slices, a few raw carrots, celery, peppers (really, whatever veggies you have on hand) in a blender/food processor. Add a few tablespoons of mashed potatoes to help bind the turkey mixture, along w/ 2 eggs. Roll into small patties, almost like crab cakes and dip in parmesan flavored bread crumbs. Pan fry in a little oil until the patties brown on both sides and, voila, turkey croquettes! So good. (This is not my recipe, by the way. Rachel Ray gets ALL the credit!)
