Summer Slow Cooker Meals – Beat the Heat in the Kitchen

I love using my slow cooker in the summer.  We’ve even been known to use it on vacation.  In fact, I had a dream a few years ago that we were in Magic Kingdom in Disney World and I was pushing a stroller with a crockpot in in, looking for a place to plug it in.   I was a bit worried about all the food my Mom had planned to take on vacation with us.

The slow cooker is also a great way to cook without heating up the kitchen.  I do tend to make different foods in the summer, than in winter.  Here are some of my favorites: 

And don’t forget dessert!  Chocolate Cobbler and Peach Crisp are delicious anytime of year.

  1. I just like to use my slow cooker to prep boneless, skinless chicken to shred up and have in hand for light summer salads. My fav is spinach, strawberry, feta salad topped with a little shredded chicken.

    I would like this, except for the fact that the only two things I can eat on this list are beans……and that’s if there’s no meat. This should be a lil more vegetarian friendly.

      I’m pretty sure this blog doesn’t claim to have anything to do with a vegetarian diet. I’m glad you’ve made your eating decisions for yourself, but with all due respect, you can’t expect everyone to cater to your lifestyle… do a specific search for vegetarian blogs if that’s what you’re looking for. As for me, I’m super excited to try most of these recipes so I think what she posted is *perfect* for the purpose of her blog! :)
