There were all kinds of recipes shared this week in Ingredient Spotlight: Beans.  Here are a few that caught my eye:

This Deep Dish Cookie Pie from Mo’ Betta looks amazing! And it has garbanzo beans in it!

Jim would love for me to make Huevos Rancheros from Cookin’ Mimi.

Baked Black Beans with Chorizo from The Sweets Life looks like a good casserole.

Wet Bean Burritos from Pocket Change Gourmet look delicious.

Refried Beans without the Refry from For the Love of Grub is a recipe I’ve heard people rave about for a long time.  I have got to give it a try.  You use the slow cooker and the beans are freezable.  You can make a bunch and there are all kinds of variations.

    I have 5 children and oh how different they all can be! The book would be great to hopefully understand each child. I work but still want to provide good home cooked meals for them. I love your recipes and especially crockpot recipes to get me through those busy days!

    I have one kid who’s in college now. But you’re right: this would make a great gift for mother’s day or as part of a baby shower gift (we have some new parents and parents-to-be at work). :)

    BTW, I love your meal plans (I think maybe I’ve commented on this before). While I don’t use the entire plan for any given week, I do pick and choose, and combine with other recipes I’ve found or that are our favorites. Every recipe I’ve tried from you is EXCELLENT! Thank you for doing this. It has helped me with organization AND with saving money. :)
