You might have noticed there’s a little thing called MARCH MADNESS going on right now.
Sweet 16 is this weekend.
And Friday, University of KY meets up with Indiana University. Just in case you don’t follow basketball, I need to let you know that this is an important match up for several reasons.
First, UK has only lost 2 games this year and IU was one of the teams to beat us. That was a fantastic game to watch and since I was born and bred a Hoosier, it was kind of fun for me to see Indiana win, even though I hated to see UK lose. Oh the inner conflict!
When IU won that game, my friend Liz from Hoosier Homemade tweeted me to gloat just a little. Now our teams are taking each other on again and we decided to add a little contest of our own: Red Velvet vs Blue Velvet.
And you get to determine the winner! Okay, it’s just a friendly competition with no real winner or loser, but if you want to put in your 2 cents, leave a comment to let me know your pick.

I’ve got the blue velvet recipe for you here. No UK decorations, but I do have another blue & white snack if you want to add to the cupcakes (or skip the baking altogether). York Peppermint Patty Pieces are blue and white and super yummy too. Look for them in the candy aisle of the grocery store.
Ingredients
- 2 cups sugar
- 2 sticks butter, softened
- 2 eggs
- 1 Tbs. cocoa powder
- 1 Tbs. Wilton food coloring gel in Royal Blue
- Wilton food coloring gel in Violet – stick a toothpick in the bottle and use that amount
- a teaspoon or two of water
- 2 1/2 cups cake flour
- 1 tsp. salt
- 1 cup buttermilk
- 1 tsp. vanilla
- 1/2 tsp. baking soda
- 1 Tbs. vinegar
- 2 pkgs cream cheese, softened (16 oz)
- 2 sticks butter, softened
- 1 tsp. vanilla
- 4 cups powdered sugar, sifted
Instructions
- Heat the oven to 350 degrees. Put cupcake liners in the cupcake pans.
- In a mixer bowl, cream the butter and sugar.
- Add the eggs, one at a time, mixing well.
- In a small bowl, mix the cocoa, food coloring gel and water together to form a paste. Add to the ingredients in the mixer bowl and blend well.
- Stir the flour and salt together and add to the wet ingredients, alternating with the buttermilk. Mix well.
- Blend in the vanilla.
- In a small bowl, combine the baking soda and vinegar and then add that to the other ingredients in the mixer.
- Fill the cupcake liners with batter, about 2/3 of the way full. The batter will be thick.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool completely before frosting.
- Makes 24 cupcakes.
- In a mixer bowl, beat the butter, cream cheese and vanilla until smooth.
- Add in the powdered sugar gradually.
- This made a lot of frosting, but I probably used over half of it.

I have to say Red Velvet! We live in southern Indiana very close to Cat Country and we would love nothing more than to beat UK one more time! But I am so nervous I probably won’t actually watch.
