How to Freeze Zucchini

This is the giant zucchini that was gifted to me the other day.  I turned part of it into Zucchini Carrot Cake.

The rest got shredded up and frozen.

Just pop the shredded zucchini into a Ziploc bag.  Don’t forget to label the bags.  I froze mine in 2 cup quantities.  I got 6 cups out of this one zucchini!

Now I can use the shreds for more cake or bread or even in soups and stews.

  1. I love the gift of an over grown zucchini! Though I hate the seeds! So I half mine, take a spoon run it down the center carving the seeds out. Then shred and freeze. Its so great to make zucchini bread for months afterwards…. its a family favorite in our house!

    I use my food processor and shred it. It’s has more liquid, but it works for zucchini bread. Is there a way to freeze it without shredding, though? I have a few chili recipes that call for zucchini, but it’s so expensive in the winter.

      You can freeze slices of zucchini or matchstick cuts. They won’t be crisp though, but would work to add to pasta dishes or casseroles, I would think.

    I’ve got two big ones waiting to be shredded and frozen today. Have you done an ingredient spotlight on zucchini yet? I need some ideas! I did find a good Betty Crocker meat loaf recipe that takes 2 cups of zucchini.

  5. Yep – we freeze slices or rounds along with shredded. They key when you thaw the zucchini is to drain all the excess water! I just made a lasagna using zucchini as noodles — I might try freezing a few zucchini noodles and see what happens.

    I have THE BEST zucchini bread recipe that I’ve been meaning to do something with. 2 big zukes in the garden. I guess it’s time. But I’d love more recipes too!

    What is your opinion when making zucchini bread with the frozen shredded zucchini? Drain the liquid off or dump the whole thing into the recipe?

    This is great when used for a pizza crust, instead of the flour. Mix with an egg, a spoonful of flour and bake for a few, then add the toppings that are normally added. mmmm

    A lady at work brought a zucchini pie in yesterday. It looked and tasted like a sugar cream pie,but had a cup of zucchini in it. Very tasty.

    Never thought of freezing Zucchini before (silly I know)! I usually shred two or three small/medium ones and put in chicken zucchini enchiladas!
