Menu, Grocery List, Recipes Year 2 Week 33

This menu is pretty streamlined.  By that, I mean it makes good use of time and ingredients.

First, when you grill the chicken for Chicken Smothered with Summer Veggies, grill enough so you can use some in the Green Chili Chicken Enchiladas later in the week.  You could grill even more and slice and freeze it for later.

You’ll use pesto sauce for two meals, which means there won’t be any waste of ingredients.

And if you want to maximize even more, instead of using store-bought meatballs, make an extra large batch and stock some away in the freezer for quick meals later.  If you choose to do that, you’ll need to add the ingredients to the grocery list.

As always, you get 6 dinners and 1 dessert.  Serving suggestions are included in bold on the recipes and in curly brackets {} on the grocery list.

Sweet and Sour Meatballs over Rice
Pesto and Crushed Tomato Shells, salad
Chicken Smothered in Summer Vegetables over Couscous, salad
Green Chili Chicken Enchiladas, chips and salsa, corn, salad
Pesto Tomato Pizza, salad
Tilapia with Veggies Baked in Foil Packets, baked potatoes, steamed veggie
Caramel Fudge S’more Nachos

  1. Excited about this meal plan this week. I just love enchiladas, and my 3-year-old loves couscous! I’m a bit scared of the meatballs, but this is what I like about the menus – getting me out of my box and trying new things!

    Not good menus for someone allergic to tomatoes!

    Wish you would add punctuation to the “Crushed tomato shells”. Read comments and people were puzzled. You can fix it–please do.

  5. Guess what? We all loved the meatballs! ha. And the smothered chicken with veggies was delicious last night! Tonight will be the pesto tomato shells…so excited! Thank you soooooo much for what you do. I have even been losing weight since using your menus!
