Make Your Own: Cornbread Muffin Mix

Cornbread muffins are an easy way to round out a meal.  I decided to save a few steps by making my own mix.

One note: Don’t leave out the butter when you mix them up.  We had company the other day and I served these muffins.  Right before we sat down to eat, I discovered the melted butter that was supposed to be in the muffins sitting in the microwave instead.

Please tell me I’m not the only one to have trouble talking and cooking at the same time!  I once melted a Tupperware bowl in the oven because I was talking on the phone and not paying attention.  I meant to turn the oven on to about 200 degrees and then turn it off again, to rise some bread dough.  The key is turning the oven off!

I’d love to hear your stories of distractions that led to cooking disasters!  But first, let’s get to the recipe.  Here’s what you’ll need:

  • 4 cups cornmeal (white or yellow)
  • 4 cups flour
  • 1 cup sugar
  • 4 Tbs. baking powder
  • 2 tsp. salt

Stir all the ingredients together in a large bowl.  Store in a tightly covered container or in a zip top plastic bag.  This will make 4 batches of 12 muffins.

To use:  Measure 2 1/4 cups of mix into a bowl.  Add 1/2 stick (4 Tbs.) melted butter, 1 egg and 1 cup milk.  Stir to blend.  Divide into greased muffin cups and bake at 425 degrees for 15 minutes.

  1. Toooo many disasters to list! Last week I was transferring the dough from the bread maker into a loaf pan to bake and realized I forgot to include the YEAST! Yep, into the garbage and start over.

    • Joy, lack of yeast in the bread machine would make for a mess! My husband used to set up the bread machine all the time for us. He would add honey and set the spoon in the bread pan to drain off while he added other ingredients. One time he forgot to take the spoon out. We tease him all the time about his “spoon bread”!

  2. I once tried to make my own almond paste. Everything was going fine, until I decided it needed just a little more almond extract. I reached for the extract bottle, dumped in a bit and … all of a sudden the smell of peppermint!! And peppermint extract doesn’t hide! The chocolate & almond paste pastries where more like having hot chocolate an a ski trip than sitting in a French bistro!

  3. No cooking disasters to share but once set my keys in the fridge while pouring milk into baby girl’s sippy cup! Left them there and could not find for hours!

  4. Well, this one’s not mine, but my roommate once melted a plastic plate in the oven. She was trying to keep something warm and put the oven on broil accidentally. After the plate had cooled we popped it off the oven grate and displayed it on our table. You wouldn’t believe how many people loved our “sculpture” and wanted to know where they could buy one!

  5. Great timing – cornbread muffins are on my menu plan for tomorrow. I think I’ll try making up some mix during the day, then getting Ewok to cook them as he’s chef.

  6. This week, forgot the salt in the muffins on Sunday. Forgot to add the parsley to two meals–Monday and Tuesday. It is only Wednesday, and I haven’t made dinner yet!

    Past history–missed butter in bread, yeast in bread, salt in bread–all on different occasions.

    Tried to blend broth from hot crockpot in blender–resulted in broth everywhere from the ceiling to the floor. Hubby cleaned it up. I cried. Result: Hand blender.

    Fortunately, I’ve been cooking for close to twenty years, and so the average isn’t as bad as it sounds from this comment.

  7. Oh, my goodness! I had to laugh when you mentioned melting a Tupperware dish ~ I did the same thing. While washing dishes, I had run out of counter space and needed a spot to put my large, square tupperware container, so I put it in my oven to dry. I got distracted and never took it out… The next time I used my oven, I had a horrible smell take over the house ~ it was then I remembered my container. And yes! I was the one that had to scrape my oven racks clean. Memories!!

  8. re: the muffins….I’ve been a faithful Jiffy Mix user for years…does anyone know how this compares in taste? I’d love to make the scratched version!

  9. Forgot to take the paper out of the frozen pie crust once. Had apple pie with wax paper in the bottom!
    Another time, forgot the eggs in the pumpkin pie. Tasted ok, just a different texture. Oh well, lessons learned.

  10. I am only getting 3 full batches of muffins out of the mix. 4+4+1+ a few tablespoons does not equal 10 cups of mix needed to make 4 batches. Also the oven temp seems a bit high or the time a bit long because mine burn at 12 min at 425. Any suggestions? I’m trying to figure this out before our daughter’s wedding. I am having others make the muffins and want to just give them a bag of mix along with the directions. Thank you for your help!

    • Mary, I went back and looked at the recipe. You’re right about the amounts. I think it should be 2 1/4 cups of mix to make one batch. As far as the time goes, it could be that your oven bakes hotter than mine. You might try dropping the temp to 400. If you’re having others bake the muffins in their ovens, you might want to have them do a trial batch or two to see how it goes. Congratulations to your daughter and good luck with all the planning!

      • Tiffany, thank you so much for your help. I just made another batch using 2 1/4 cups of the mix and they came out perfectly! I think my oven is hotter, so I turned it down to 400* and baked them for 12 min. I am so glad I found your site. Our daughter’s wedding is Sept 14 and lots of my friends will be baking cornbread muffins for the reception. All I have to do is give them a bag of the mix along with the directions and we are good to go! Thanks for your feedback!
