Strawberry Lemonade Cookies with Pink Lemonade Frosting

Craving a pink-pink, sweet, sunshine-y bite of Valentine’s?

Here you go!

I woke up one morning a few weeks ago and the idea for this recipe popped into my mind.  I’m not sure why that happens to me sometimes, but it’s a lovely way to wake up.  That’s how the idea for S’mores Pie came to me too.

Anyway…I’d seen this post for Strawberry Cake Mix Cookies.  It brought to mind the strawberry cake mix that I’d had in my pantry.  I decided to combine it with pink lemonade. Flavor blast!

At first bite, the cookies taste almost too sweet and lemonade-y.  But then you want another bite and another.  Then pass me another cookie please.  These are good!  Like dropping bites of sunshine right into the middle of winter.

Here’s what you’ll need:

For the cookies:

  • Strawberry cake mix
  • 1 stick butter, softened
  • 2 eggs
  • 1 tsp. vanilla
  • 1 Tbs. water
  • 1/2 cup pink lemonade mix

Combine all the ingredients in a bowl and beat with a mixer till well blended.  Drop by teaspoons onto a baking stone or cookie sheet.  Bake at 350 degrees for 8-10 minutes.

For the frosting:

  • 1 1/2 cups powdered sugar
  • 3 Tbs. pink lemonade mix
  • 3 Tbs. soft butter
  • 1-3 Tbs. milk

Stir the powdered sugar and lemonade mix together in a small bowl.  Stir in the butter.  Add the milk gradually, until the frosting reaches a spreadable consistency.  You want it thick, but smooth enough to spread.  Frost cooled cookies.

  8. We just made these today — yum! I think next time we’ll scale back on the powdered lemonade mix. It was a bit too lemony for my kids’ tastes.

  14. I made these as Lemonade Cookies with Lemonade Frosting and they were awesome!!! I wanted them yellow for the Steelers and our Super Bowl Party. So, I just used Lemonade drink mix and lemon cake in place of the strawberry. They turned out great!

    I have to say that these went in the garbage. I have never thrown away any sort of sweet, but there they are in my trash. I kept trying them through each stage – the dough, the plain cookie, and the end frosted product – and I could not like them. I ended up with stomach rot having tasted a little dough and eaten two bites. BUT, this is the first time I have ever disliked anything Tiffany has ever posted, so I think I am going to use the base recipe (minus the lemonade) to try again, maybe with plain Betty Crocker vanilla frosting.

    • Oh no! I’m so sorry that you didn’t like them. They are very lemonade-y and sweet, so not for everyone. Plain strawberry cookies with vanilla icing sounds like a good alternative. So sorry about the recipe!

      I made these to take to a crop tonight because they weren’t the usual cookie. I, however, don’t care for them at all and neither does my 8 year old. I am still going to take them to the crop because it is too late to make anything else. Hopefully, someone there will like them and I can send the cookies home with them so they aren’t wasted. Both my daughter and I thought they were way too sweet. I might try lemon cake and lemonade that another poster suggested and also cut back on the lemonade mix. The cookies do look very pretty though.

      • Cheryl, I think these may be one of those things you either love or hate. I’ve heard from a couple of people that they don’t like them. But I also have friends who have made them over and over. I’ve even been introduced as “the lady with the pink lemonade cookie recipe”. They are sweet though and a bit tart too. Sorry you don’t like them, but I hope someone at your gathering will. Thanks for trying them!

  19. made these for a summer party and they were a hit! I used strawberry lemonade mix (instead of pink lemonade…. i was afraid pink lemonade would be too tart) and it worked out great. I also served the cookies chilled… made the cookies a bit more refreshing.

  20. I want to make these with hello kitty cookie cutters. Would it work if I rolled it out and made one big cookie?

    • Christy, I’m not sure. You’ll probably need to add quite a bit more flour. That might change the dough too much. I’m sorry I’m not more help.

    I was searching the internet for a lemonade mix icing recipe and came across yours. I made my own sugar cookies and used your icing recipe. I just had plain lemonade mixing and used that. The icing is the most delicious icing I have ever come across!!! Thank you! I can’t wait to make again.

  23. My boyfriend plays baseball and I make cookies for the players every game. I made these for the team yesterday. They absolutely loved them and so did the coaches! I was clean out of cookies by the time I got home. They loved the sour taste of the frosting and the sweetness of the actual cookie. They only needed one cookie each, even though I had made enough for them to have 2 because of the sweetness. Thank you for providing this recipe! I really enjoyed it and will most definitely be making it again!

  24. I made these tonight but changed the recipe, used kool-aid cherry limeade instead of pink lemonade and Maraschino cherry juice instead of water in the cookies. And the kool-aid cherry limeade and 1Tblsp maraschino cherry juice in the frosting. It’s a sweet tart explosion in the mouth. Very yummy.

    Lemonade mix at all. I may use your frosting recipe for I’m not a big fan of canned.
