If you’ve ever been on a low carb diet, then you are bound to have come across recipes similar to this one. It’s one of my favorites and you don’t have to be low carbing to enjoy it, as it’s a fun and easy new way to simply get cauliflower on the table.
What you’ll need:
- 1 pound bag of frozen cauliflower florets
- 3 oz. package of cream cheese, softened
- 2 Tbs. butter, softened
- heavy whipping cream
Cook the cauliflower according to the package directions. I use the microwave. If you can find the new packages that allow you steam the vegetables in the bag, all the better.
Add the cream cheese and butter to a large bowl. Drain the cauliflower very well and pour it right on top. Allow the florets to sit for a minute or two on top of the cheese and butter to help soften it even more.
Using a potato masher, hand held mixer or food processor, mash/mix/process the mixture until smooth. Use a bit of cream if you need some extra moisture to get things moving.
Salt and pepper to taste. Serve.
