21 Ways to Use Leftover Turkey

Because Thanksgiving is later this week, I decided not to post a new Menu + Grocery List today.  Instead, we’re going to talk leftovers. I know the turkeys haven’t even been cooked yet, but it’s good to plan ahead.

All of the recipes listed here call for cooked chicken, but you can use cooked turkey instead.  If you have plenty of leftover turkey, portion it out in 2-3 cup quantities and freeze it for later.  Having a stock of pre-cooked poultry meat in the freezer is one of my favorite quick-dinner tricks.

On to the recipes.  They all have chicken in the name, but call it turkey whatever or fowl food (okay, maybe not that) and you’re good to go.

If you had a quarter for every time I made your Golden Chicken Enchiladas, you’d have some serious money. I’ve made them with pork, too. Those are really, really good. I have access to lots of New Mexico green chile, and that recipe is an awesome way to use them. Again, thanks for your time and effort. May God richly bless you.

    • I’ve made and frozen many of the recipes. I would think almost all of them could be put in the freezer. The quesadilla filling could be frozen so it’s ready to use. The only one I wouldn’t freeze is Asian Noodles with Stir-Fry Veggies, but it is so easy to pull together at the last minute.

    I like to make a sandwich filling with all those little bits and pieces of turkey. Simply combine a pkg of cream cheese with juice from a small jar of green olives then add turkey, the drained olives and a handful of pecans. It will keep in the fridge for several days but it doesn’t last long around here!!

    • Oh yum! I recently discovered that I really like green olives (I guess I never tried them before because they look like they’re staring back at me if stuffed w/ pimento). Your sandwich idea sounds delicious!
