Scrambled Eggs, Ham and Muenster Cheese Skillet

We needed a quick dinner one night (I feel like I say that all the time!), so breakfast for dinner worked great.  I really wanted to make Scrambled Egg-wiches, but I didn’t have any English muffins.

Instead, I cooked the eggs and ham in the skillet and then placed Muenster cheese slices over the top.  The cheese melted into the eggs and ham perfectly.

Super fast and it tasted great too.

How often do you have breakfast for dinner?  How often do you cook this type of food for breakfast?

  1. This is very reminiscent of one of my son’s favorite breakfasts from our favorite restaurant – Ham, Mushroom and Cheese Skillet. The only thing missing is the mushrooms. Oh, and the bottom layer of hashbrowns. But, either way, it sounds yummy! :)

  2. I love having breakfast for dinner. With out work schedules and the kids school schedules, we rarely have breakfast at breakfast time unless it is cereal or something quick. Having breakfast at dinner time give me more time to make all kinds of goodies like sweet rolls and donuts.

  3. I am having trouble accessing the weekly menus now that your site has changed. Also, now going to eatathomecooks.com is not really working either and is only pulling up your muenster cheese/scrambled egg post.

  4. This looks great! We have breakfast for dinner once a week most weeks. I rarely cook a big breakfast, except on Saturdays. Sunday mornings are just too hectic! My husband likes to make French Toast or pancakes with sausage and eggs for “brinner” as we call it. Sometimes we get a real treat and he makes a frittata!

  5. This looks divine! We do a weekly breakfast for dinner night (it’s built right into my menu plan) and this would be a great addition. Gosh, I love Muenster cheese!

    • Brenda, sure I can give you the recipe. Use 1-2 cups cubed ham. Put those in a skillet in butter and cook a few minutes until they begin to get hot. Scramble the eggs (1-2 per person, depending on how hungry you are), add salt and pepper to taste, then add the eggs to the skillet, stirring them so they get scrambly. Remove from heat, lay sliced Muenster cheese over the top. Place the skillet in the oven on low broil to melt the cheese. If you don’t have an oven proof skillet, wrap the handle in foil. That’s it! Enjoy :)
