It’s Monday, so I’ve got a new menu and grocery list ready for you to print.
This menu takes advantage of a few “planned leftovers”.
One night, you’ll cook a whole chicken in the slow cooker. Buy the biggest chicken you can find that will fit in your slow cooker. Use the leftovers in Cheesy Chicken and Rice Casserole. If you’re lucky enough to have even more leftovers, bag it up and pop it in the freezer for a meal later on.
There are two recipes that use diced ham. You can buy a small chunk of ham and dice it yourself, or buy a pack that is already diced. Use most of it in the Ham and Potato Chowder, but save a handful or two for Scrambled Eggs, Ham and Muenster Skillet.

- Ham and Potato Chowder, Cheddar Muffins
- Whole Chicken in the Slow Cooker
- Cheesy Chicken and Rice Casserole
- Scrambled Eggs, Ham and Muenster Skillet, Whole Wheat Biscuits
- Pork Chops Topped with Pineapple, Green Pepper and Onion
- Beef and Black Bean Taco Bake
- Apple Cider Cake

Hi Tiffany. Thanks for the menu and grocery list. I have a request/idea for Eat at Home. Last year, my very smart friend Laura taught me to buy and cook turkeys when they go on sale during the holidays. Then, I freeze the cooked meat for future use. She also taught me how to make broth while I’m at it. I need some more recipes, though. I love soup and chili, and I’m sure there are some yummy, healthy casseroles that the turkey could be added to. Perhaps you have some ideas to share?

Beverly, you can use cooked turkey in any recipe that calls for cooked chicken. Try quesadillas, enchiladas, tortilla soup, Super Simple Asian Noodles and Veggies, chicken (turkey) broccoli divan… Some of those are healthier than others. Maybe I’ll put a list of those kinds of recipes together to use turkey leftovers in. Smart to buy turkey when it’s cheap and then freeze it. Your friend Laura is very smart!
