We’ve had a wicked, wet start to the month of May. The earthworms keep trying to take refuge in our kitchen. Yuck and double yuck! I’ll be glad when it stops raining.
If your May is like mine, you’ll be happy about this menu. Several of the recipes can be doubled and then you can freeze the extra for nights when there just isn’t time to cook. There’s also a slow cooker meal and one of my favorite go-to recipes, Vietnam Fried Rice.
As always, there are 6 dinners and 1 dessert. Serving suggestions are included in bold on the recipes and in curly brackets {} on the grocery list.
