Potato Salad Loaf – You Have to See It to Believe It

“What a beautiful new way to serve potato salad. And the luscious glaze you make with Hellman’s keeps it fresh and moist to the last slice. That’s real mayonnaise. Whole-egg Hellman’s.”

This post originally appeared 4/1/09.  I don’t usually re-publish posts, but I couldn’t resist this time.

I found this ad in an old recipe box that belonged to my Grandma. She was a great cook and I have no idea why she thought this should be cut out and saved.

What were the folks at Hellman’s thinking? They lost me at the word loaf. “Moist to the last slice”? Yuck! Who wants to eat a slice of potato salad? But you’ve got to love the radish and carrot flowers decorating the lusciously glazed sides of the loaf. So cheery, so Spring-like, so ’70s.

    You have to admit, if you took that to a picnic it would really stand out. It’s very inventive. Someone must have been really bored to think they wanted to make a decorated loaf of potato salad.

    So glad to see this one wasn’t for real. I love potato salad but that’s just… unnatural. Though I did see a wedding “cake” on tv once that was basically meatloafs iced with mashed potato, decorated with mashed potato flowers. Seriously.

    Oh, dear Lord – I am not a fan of potato salad in general and that…thing…looks positively disgusting. Although I think if I started making that for all the family gatherings, they’d eventually stop asking me to bring a dish. :)

    You know you’ve been on a diet too long, when you think – “Mmmm, that looks like some durn good potato salad.” I probably have this recipe saved somewhere (It’s the little flowers decorating the side – I’m a sucker for cute garnishes.)

    I clicked on the photo to enlarge it and the recipe calls for gelatin, chicken broth, and mayo for the glaze….eeeewwwww!!!!! I wonder how many people, if any, made that back in day? And I love mayonnaise, but that’s going a little too far in my opinion. Yuck!

  23. This is too funny! You actually had me for a minute- I thought it was a little bit weird but was sure there was a point… and there was- April Fools. It reminds me that I need to plan an April Fool’s trick for my daughters when they get home from school. My older daughter fixed our showerhead so that it would spray all over me when I turned it on this morning so I’ll have to get her back…

    My mom was famous for her potato salad.When my sisters best friend got married in the seventies,mom catered her reception and I made a 3 tiered wedding cake out of her potato salad, decorated with vegetables. It was a big hit.
