This week’s menu is designed to stock your freezer with dinners. You don’t have to use it like that. You can cook and eat that night if you want.
But you may want to take this opportunity to stash away a few meals in the freezer. Tomorrow, I’ll have more tips for cooking and freezing a lot of meals at once, so you’ll want to check that out.
Here are the meals that are on the menu, along with a few notes about each:
- Pulled Pork, Oven Fried Potatoes and Cole Slaw – you have the option of cooking either 4 lbs. of pork or 9 lbs. Either way, you should end up with plenty in the freezer and some to eat the night you cook it.
- Golden Chicken Enchiladas – This can be frozen or eaten right away. If you have a small family you may have enough to put half in the freezer. One recipe serves about 6 people.
- Smothered Steak with Mushrooms and Onions – This makes about 7 steaks. For us it’s enough for 2 meals since some of my kids aren’t big meat eaters.
- Spicy Chicken Garlic Pizza – Double this to make 2 pizzas
- Honey Pork Chops and Hashbrown Casserole – Eat them now, or freeze for later
- Stromboli – Double this and put them both in the freezer, or eat one this week. Just thaw and bake according to the directions.
- Apple Brownies

I have a question about the Stromboli…well, two questions really. First, do you double all the ingredients in the recipe, or just the bread? Second, do you freeze it unbaked? That doesn’t hurt the dough to thaw it, and then freeze it again?
I love this menu, by the way!

Melissa, you double all the ingredients. I froze the stromboli unbaked and then thawed it in the fridge and baked it. It didn’t seem to hurt it at all to do that. I froze 2 of them in foil pans. I had to curve them around a bit to make them fit, so they weren’t very pretty, but it worked well.
Yum! Your menu sounds delicious. I like the spicy garlic pizza!
I’m always on the lookout for yummy menu choices. We’re still having to watch our pennies.
Thanks for all the ideas, I like to have some lunches ready in advance in the freezer and they’re all perfect for that. The Golden Chicken Enchiladas sound especially yummy!
I spent weekend preparing all the delicious meals on this menu and put them in the freezer. I am a single girl so it is difficult to cook for just one person every day and I catch myself going out to eat WAY too often. So I made the meals and froze them in 2-serving portions so I’ll have one to eat now and one for later. It beats cooking something and having leftovers for 6 days in a row!! Now I have plenty of variety and all I have to do it come home and pop it in the oven. Thank you so much for doing this ~ the recipes are yummy and easy! Oh, and my mom said the apple brownies are a hit
