Grilled cheese is a classic, a staple of lunches everywhere. I had never heard of putting tomato on them until we lived near Philadelphia. A diner there served them with tomato on their lunch menu. Yum!
I also like to use 2 different kinds of cheese. This sandwich has Swiss and colby jack, but cheddar, provolone and good old American are good too.
The secret to the perfect grilled cheese is toasting the bread perfectly while melting the cheese inside. Cook it too fast and it will burn on the outside and be cold inside.
The perfect food to eat with grilled cheese (other than tomato soup) is a dill pickle.
