Potato Soup

Cool weather is creeping in on us.  It’s time to pull on a sweater and pull out the soup recipes.  This potato soup is not fancy or dressed up.  It’s comforting, like your favorite sweat shirt.  Warm, nourishing, inexpensive, quick and easy.  Add hot Cornbread or Graham Muffins and you have a homemade meal in less than 30 minutes.

The ingredient list is short:

  • potatoes, peeled and diced
  • butter
  • salt
  • milk

I don’t measure any of this.  Make a lot or a little.  Grab a pan that will hold the amount of soup to feed your family.  Dice up the potatoes and add them to the pot until you have the pot about half full or so with potatoes.  Sprinkle salt over them, add a bit of butter and fill the pot with water.  Boil until very tender.

Drain the potatoes.  Mash some of them up with the back of a spoon as you’re stirring in more butter and salt.  Pour in milk, enough to make it a soup.  Heat through.  Add more salt to taste and pepper.  Serve with shredded cheddar cheese, if you like.

Potato soup is one of our favorites. We had potato soup with corn bread Wednesday night for supper. It’s always a hit.
I mix a few tablespoons of flour in with a little milk and add to the mixture after it’s cooked a little while, just to thicken it up a bit.
And of course good shredded cheese on the top makes it even better….
mmmmmmmm, yummy!

Yummy!! I haven’t had this in forever and a day! lol! Looks delicious! The way i’m feeling I could sure use a bowl right now! Cheese on top just makes it a little taste of heaven!
