Week 6 of the Menu + Grocery List includes one of my favorite stand-by meals. Chicken Fiesta and Black Beans is so versatile and good, I find myself making it frequently. I love coming in from a busy day to a house filled with the aroma of this dish. It’s also great to serve when not everyone will be eating at the same time. This happens a lot now that we’ve got two teens who are on the run all the time.
Also this week, you’ll make Penne Gorgonzola. I tried to duplicate a recipe from Johnny Carino’s when I created this. It’s good and easy.
For dessert, I couldn’t resist Kentucky Chocolate and Nut Pie, especially since you’ll have an extra pie crust from making Swiss and Bacon Quiche.
