My daughter is putting these in the oven as I type. For the record…..we all HATE overripe bananas. But, we just peel them and freeze in a bag for smoothies, my husbands awesome banana bread or any other recipe calling for bananas.

I’m the biggest offender when it comes to throwing away overripe bananas! I’ve finally let go of the guilt after several years of this wastefulness! this looks like a great recipe, thanks for trying it out and sharing!

I don’t blame you…if I made banana bread everytime I got old banana’s, I’d be making a flippin lot of banana bread. These cookies look great though…glad you rescues those bananas!
