Parmesan Zucchini and Summer Squash in the Microwave

Summer squash and zucchini are abundant in gardens right now.  They can be turned into a quick side dish for dinner by using the microwave.   It only takes 10 to 15 minutes, start to finish.

Here’s what you’ll need:

1 zuchini, cut into slices

1 yellow summer squash, cut into slices

oregano, dried or fresh – to taste

salt and pepper

2 Tbs. olive oil

1/4 cup parmesan cheese (a better quality shredded is better, but I was out so I used the Walmart brand grated)

Toss the squash and zucchini slices with the other ingredients.  Sometimes I add tomatoes too.  Microwave on high for about 4-6 minutes, or until tender.

That’s it.  Easy, quick and healthy.

    Seems like you love zucchini! I wish I had added it to my most recent recipe, you’ll see it on my site, and how perfect it would have been, but it was late and I was TIRED, and I forgot! Too bad, cause zucchini is yummy!
