Honey Roasted Peanut Butter

This is my first official post on the new site.  I’m very excited to have made the move and hope that all of you find it easier to use and read too.  Let me know what you think.  Don’t be surprised if there are a few changes in the coming weeks and possibly a few hitches (hopefully, not too many of those).

Onto the Honey Roasted Peanut Butter.  A friend shared this with me a few years ago and it is so easy and good.  If you eat it soon after it has been made, the peanut butter will be a little warm, spreadable and dippable.  (Is that a word?)

Here’s what you’ll need:

honey roasted peanuts

a small drizzle of oil

apples or other food to dip

Put the peanuts in a blender or food processor.  Drizzle a tiny bit of oil in with them.  I didn’t measure this but it is probably only 1/4 tsp, just a very small amount to help it blend.  Blend it until it is the texture that you want.  This takes a while in a blender.  Serve with apples, crackers, celery – whatever you like dipped in peanut butter.

Here’s what one friend did the other night.  She couldn’t resist the No Bake cookies that were sitting next to the peanut butter.  She’s not the only one who couldn’t resist.  Warning: this combo requires a big glass of milk.

What a yummy recipe!

It’s especially useful now that we have that salmonella issue with lots of popular commercial brands and products at the grocery store.
